Crepes – Млинці – Блины

Whether you call them crepes, млинці, блины, or palačinka, we are certainly talking about the same thing. This is a basic recipe you can try at home.
Ingredients
- 2 cups of white all purpose flour
- 1 cup of milk
- 1 cup of water
- 6 eggs beaten
- 1/2 cup of vegetable oil (or melted butter)
- 1/2 tsp of salt
Instructions
- In a large bowl mix water, milk, eggs and oil. Mix it well to break down the eggs.
- Add flour and salt to the wet ingredients and mix (or whisk) it well, until no little lamps of flour remain. Let it rest for at least 15 minutes, or as long as one hour.
- Heat a 9″ non-stick frying pan (in the video we used a 9″ cast iron skillet ) on high, when it’s hot turn it to medium heat. Drizzle a little oil or butter onto the pan.
- With a ladle pour about 3.5oz of the batter onto the pan while swirling the pan around to evenly distribute the batter on the bottom of the pan.
- Fry for about 1 to 1.5 minute on each side.
- Repeat steps 4 and 5 until all the batter is used.

very nice blinzhiki … now I need sour cream, and my favorite … strawberries!
My mom used to fill with a cheese mixture made with farmers cheese…I would like to know if you have any ideas on how filling was made..I think she put farmers cheese, egg yolks and sour cream? She rolled filling up in crepe and put in oven??

I make the crepe batter in the blender and put the blender jar in the fridge for at least 1 hr or overnight. Then I pour the batter right from the jar into the pan. I only made crepes on my tiny nonstick pan, but it’s good to see that I can use my big cast iron pan like yours.
