Polish Zapiekanka with Mushrooms
Zapiekanka is a Polish street food and can be made with variety of ingredients, mushroom being the most common one.

Ingredients
  • ½ of baguette (cut in half length-wise)
  • 2 cups of sliced mushrooms (in this recipe we used baby bella, but you can use any mushroom you like)
  • 1 medium onion chopped
  • 1 teaspoon of dried oregano
  • 1 tablespoon of oil (to fry mushrooms)
  • 1 cup of shredded cheddar cheese
  • salt and pepper to taste
  • Ketchup (OPTIONAL for serving)
Instructions
  1. Preheat your oven to 375°F.
  2. Fry the mushrooms an onions om medium heat for 10 minutes in a tablespoon of oil. Adding the oregano halfway through frying.
  3. Prepare baguette by taking some of the crumb out making a "gully" of sort where you will place your mushroom mix.
  4. Place the fried mushroom mix on top of your baguette, sprinkle with the shredded cheese and bake for about 10 minutes at 375°F.
Notes
Zapiekanki is considered student snack in Poland. You can prepare and freeze dozen or so ahead of time (minus the baking step) and bake whenever you feel like it. Add about 5 minutes when making them from frozen.

    Fr. Vlad, in the video says to bake this dish at 350°F. But in the printed recipe it says bake at 375°. Which is correct?

      Gordana, it the correct temperature 375°F for about 10 minutes or util the cheese is melted and starts to bubble. Thank you for spotting the error, we need be more diligent around here! 🙂
