Our choir director Zach Mandell brought these rolls to one of our fund-raisers. Needless to say every one loved his “Pepperoni Rolls:” Whether you are looking for a great appetizer or that soul-warming snack, you will love this recipe. Ingredients
  • 2 cups warm water
  • 1 tsp white sugar
  • 2 packages of yeast
  • 10 cups of flour
  • 1 1/2 cups of white sugar
  • 4 tsp of salt
  • 4 eggs, beaten
  • 1/2 cup of butter, melted
  • 1/2 cup of oil
  • 2 large sticks of pepperoni, sliced thin
Instructions
  1. Dissolve 1 tsp. of sugar in 2 cups of ward water in a small bowl. Sprinkle yeast over water and let stand for 5 minutes.
  2. Mix flour, 1 1/2 cup of sugar, and salt in a large bowl. Stir in yeast mixture, beaten eggs, melted butter and oil. When the dough has pulled together, turn it out onto a lightly floured surface and knead until smooth and elastic, about 8 minutes.
  3. Lightly oil a large bowl, than place the dough in the bowl and turn to coat with oil. Cover it with a light cloth and let rise in a warm place until doubled in volume, about 1 1/2 hours.
  4. Preheat the oven to 350°F. Grease a cookie sheet or line with parchment paper.
  5. Punch the dough down and divide into about 80 pieces. Flatten each piece into a rectangle about 4 inch square. Place 4 slices of pepperoni down the center of the dough square, overlapping the slices. Roll the dough around the slices, pinch the edges closed, and place on the prepared cookie sheet with the seam down.
  6. Bake the rolls in the oven until for 14-16 minutes, or until the bottoms are lightly browned and the tops are barely golden.
