Episode 17: Ukrainian Grechanyky (Гречаники)

Never tried buckwheat? Your are not alone, most of Americans have never heard of it either. Buckwheat is very popular in eastern Europe. They very easy to make and can be cooked ahead of time and frozen.

Ukrianian Grechanyky (Гречаники)

Ingredients
  • 1lb ground pork
  • 1lb ground beef
  • 2 cups of cooked buckwheat
  • 2 cups of copped mushrooms (white or baby bella)
  • 1 egg
  • 1 sleeve of crackers
  • 1/2 cup of milk (to soak the crackers)
  • 1 large onion (chopped)
  • 3 cloves of garlic (finely mince)
  • 1/2 cup of crushed crackers (soaked in milk)
  • 1/2 of all purpose flour (to coat your grechanyky before frying them)
  • salt and pepper to taste
  • oil to brown the patties
Instructions
  1. Cook the buckwheat first by adding one cup of buckwheat and two cups of water into a pan and cook it similarly to how you cook your rice.
  2. Crush the crackers and soak them in milk.
  3. Sauté the mushrooms and onions at medium heat. The more caramelized you can get the mushrooms and onions the better end result will be. (Tip: stir frequently to prevent burning.)
  4. When your mushrooms and onions are nearly done, add to the pan garlic and cooked for a minute or two before turning out the heat.
  5. Mix mix together meat, sauté mushroom onion and garlic mix, and crackers.
  6. Form small patties of meat and coat them in flour.
  7. Fry the patties on medium heat in a little vegetable oil till golden brown.
  8. Finish your grechanyky in the oven. You can and some tomatoes sauce before putting them in the oven, but we like ours plain.
  9. Enjoy your grechanyky and do not forget to share this recipe with your friends!
